1. Heat oven to 425°F. Lightly season.
2. Put pork shoulder into large pan, then place in oven.
3. Bake for 20 minutes. Then reduce heat to 325°F.
4. Cook for about 4 hours, intermittently checking temperature until meat thermometer reads 185°F.
5. Remove pork shoulder from over. Let meat sit and cool for about 30 minutes.
