Directions
Heat oven to 425°F. Coat large roasting pan with cooking spray.
Season pork with salt and pepper.
Wrap bacon around pork tenderloin, securing with wooden picks if necessary. Transfer to roasting pan.
Arrange pineapple slices around pork in pan.
Bake 25 minutes or until meat thermometer reaches 145°F (pork will be slightly pink in center).
Place under broiler, about 5 inches from heat source, 3 to 5 minutes or until bacon is crisp.
Let stand 5 minutes before slicing crosswise into 1/2-inch-thick slices.
