  • 5-6 POUNDS FARMER JOHN® BONELESS PORK CUSHION MEAT
  • 1 BAG SARGENTO® 4 CHEESE MEXICAN SHREDS
  • 2 TABLESPOONS VEGETABLE OIL
  • 1 MEDIUM ONION, COARSELY CHOPPED
  • 1 PACKAGE OF CORN TORTILLAS
  • SPICE RUB: MIX 2 TABLESPOONS BROWN SUGAR, 1 TABLESPOON GARLIC POWDER, 1 TABLESPOON SALT AND 1 TEASPOON CHILI POWDER.
  • TOMATO MIXTURE: BLEND 1 – 8 OUNCE CAN TOMATO SAUCE, 2 CANS CHIPOTLE CHILIS FINELY DICED, 1 TABLESPOON ADOBO SAUCE FROM CAN AND ¼ CUP WATER.
  1. PREHEAT SLOW COOKER ON HIGH.
  2. HEAT OIL IN LARGE SAUCEPAN. ADD PORK AND BROWN ON ALL SIDES.  REMOVE FROM PAN.
  3. ADD ONION TO PAN AND SAUTE UNTIL LIGHT GOLDEN BROWN.
  4. SPREAD SPICE RUB ALL OVER PORK, EVENLY COATING ALL SIDES.
  5. PLACE PORK IN SLOW COOKER. ARRANGE ONIONS AROUND ROAST AND POUR TOMATO MIXTURE OVER ROAST.
  6. COVER AND COOK 7-8 HOURS ON HIGH IN SLOW COOKER OR UNTIL MEAT FALLS APART WITH A FORK. (MEAT MUST REACH A MINIMUM INTERNAL TEMPERATURE OF 145°F)
  7. REMOVE PORK FROM SLOW COOKER. USING TWO FORKS, SHRED PORK. ADDITIONAL JUICES FROM SLOW COOKER MAY BE ADDED BACK TO PORK, IF DESIRED.
  8. PLACE PORK ON WARM CORN TORTILLAS AND TOP WITH SARGENTO® 4 CHEESE MEXICAN SHREDS.
