1. Heat oven to 400°F. Season pork.
2. Lower pork into roasting pan, skin-side up.
3. Bake for 30 minutes.
4. Reduce oven heat to 250°F.
5. Continue cooking for 5 hours, or until tender with the meat at 145°F.
