Preheat oven to 400°F.
Cook bacon, crumble into pieces and set aside.
Split each of the 8 biscuits in half to make 16 flat disks.
Divide cheese into 16 equal portions.
One biscuit at a time, add a piece of cheese and about a ½ teaspoon of bacon and jalapeño on dough and wrap to create a ball. Make sure you seal it fully. Repeat for each piece of dough.
Place on a baking sheet, sprinkle with remaining bacon and jalapeño.
Bake for 10-15 minutes or until golden brown.
Serve immediately and enjoy!
