Bacon Topped Guacamole

  • 3 large ripe avocados, halved and scooped out
  • 4 strips FARMER JOHN® THICK CUT BACON, cooked crisp and cut into 1/2-inch strips
  • 1/4 medium onion, minced
  • 1 teaspoon fresh lime juice
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground chipotle
  • 1/4 salt
  • 1/4 black pepper
  • 1 medium tomato, diced
  1. Mash the avocado with a fork in a bowl until it is at your desired consistency. Stir in most of the bacon plus onion, lime juice, paprika, chipotle, salt, and pepper.
  2. Fold in the tomatoes and top it with more bacon.
  3. Serve immediately or press a piece of plastic wrap flush into the top of the guacamole, refrigerate, and serve preferably within 24 hours.
