Bacon Wrapped Shrimp With Jalapeños
Cilantro Lime Dipping Sauce
Directions
Preheat oven to 400°F.
In medium bowl, add shrimp, lime juice, zest, cilantro, garlic and salt; toss to coat. Let stand 10 minutes.
Remove shrimp from marinade; discard marinade.
Lay out bacon and cut in half crosswise. Evenly arrange jalapeño strips on the bacon and top with shrimp. Wrap bacon around shrimp and arrange on baking sheet.
Bake 20 to 25 minutes or until bacon is cooked through.
Arrange on serving platter and sprinkle with additional chopped cilantro and garnish with lime wedges.
Serve with lime cilantro dipping sauce. (To make, blend mayonnaise, lime juice, lime zest, and fresh cilantro.)
