INGREDIENTS:
- 6 slices Farmer John® Center Cut Bacon, crisp-cooked and chopped or crumbled*
- 1 package (18 oz.) romaine hearts, rough chopped (about 3 hearts)
- 2 cups chopped baby kale or spinach (optional)
- 1 cup cherry tomatoes, halved
- ¼ cup finely chopped red onion
- 1 avocado, peeled, pitted and diced
- 1 small seedless cucumber, peeled and diced
- ¼ cup toasted chopped walnuts or pecans
- ¼ cup crumbled feta or blue cheese
- Vinaigrette dressing
DIRECTIONS:
- In large salad bowl combine all ingredients, except dressing.
- Toss to combine.
- Drizzle with dressing and toss until well dressed.
