A buffet of summer flavors tops this grilled burger made with FARMER JOHN® Extra Lean Ground Pork. Layered with exotic orange-lime glaze and watermelon salsa, this juicy delight hits all the right notes— sweet, savory and spicy.

Servings: 4 Burgers
- 1 package FARMER JOHN® Extra Lean Ground Pork
- 1 jalapeno, seeded and diced fine
- 1/2 cup shallots, diced
- 4 cloves garlic, finely chopped
- 3 tbs. extra-virgin olive oil, plus more for grilling and dressing
- 2 tbs. flat-leaf parsley, chopped
- 1 tbs. dill
- 1 tsp. turmeric
- 1/2 tsp. cumin
- 1/2 tsp. salt
- 4 onion burger buns (any bun can be used)
- Avocado aioli (recipe above)
- Orange lime glaze (recipe above)
- 1 1/2 cup arugula, divided
- Watermelon salsa (recipe above)
- Salt and freshly ground black pepper
- 3 tbs. fresh lime juice
- 2 tbs. light brown sugar
- 1 1/2 cups watermelon, diced
- 1/2 cup cucumber, diced
- 1/2 cup red onion, finely diced
- 2 tbs. candied ginger, finely chopped
- 2 tbs. mint, minced
- 3 ripe avocados
- 1/2 cup sour cream
- 2 cloves garlic
- 1 tbs. fresh lemon juice
- 1 tbs. fresh lime juice
- 1 tbs. honey
- 1/8 tsp salt
- 3/4 cup orange marmalade
- 2 tbs. honey
- 1 tbs. fresh lime juice
- 1 tbs. orange juice
- 1 tsp. chili flakes
- 1/8 tsp. salt
For Watermelon Salsa: In medium bowl, whisk together lime juice and brown sugar until sugar dissolves. Add remaining ingredients to bowl and toss gently to combine. Cover and refrigerate until using.
For Avocado Aioli: In food processor, blend avocado, sour cream, garlic, lemon juice, lime juice, honey, and salt. Mix until smooth and pureed. Cover and refrigerate until using.
For Orange Lime Glaze: In small bowl, whisk together all ingredients. Cover and refrigerate until using.
Preheat grill to medium heat.
Line baking sheet with tinfoil. Set aside.
In a large bowl mix together FARMER JOHN® Extra Lean Ground Pork, jalapeno, shallots, garlic, olive oil, parsley, dill, turmeric, cumin, and salt using clean hands or large spoon. Mix until well combined and ingredients hold together, but do not over-mix.
Shape the meat into 4 even-sized patties, about 1 inch thick. Chill in the refrigerator if not using right away. Let the burgers return to room temperature before grilling.
Brush the pork burgers with olive oil, and grill them 3 to 4 minutes on the first side, until firm enough to flip, then turn over and grill for another 3-4 minutes, until the pork is just cooked through.
While burgers are grilling, in small bowl, toss arugula with 1 tablespoon olive oil and salt and pepper to taste. Set aside.
Slice the buns in half, brush them with olive oil, and toast them on the grill, cut side down, for a minute or so, until they're lightly browned.
Spread bottom side of the buns with aioli. Place a burger on the bottom half of each bun. Spread a thin layer of orange glaze over top, evenly divide the arugula between burgers, top with about 3 tablespoons watermelon salsa and finish with the top half of the bun. Savor each summer driven bite.
