French Toast with Spicy Candied Bacon

A light coating of brown sugar baked onto FARMER JOHN® Mild Jalapeno Premium Bacon is the type of pairing your cinnamon-flecked French toast has been missing. Throw on some delicious fresh berries and you’ll be bouncing out of bed.

  • 1 package  FARMER JOHN® Mild Jalapeno Premium Bacon
  • 1 cup brown sugar
  • 4 large eggs
  • 1 cup half and half
  • 2 tbs. granulated sugar
  • 1 tsp. vanilla extract
  • 1/8 tsp. ground nutmeg
  • 8 thick slices soft Italian loaf
  • 4 tbs. butter
  • ½ cup maple syrup
  • 1 cup strawberries, sliced
  • ¼ cup blueberries


Preheat oven to 300 degrees F.

Place wire rack inside a baking sheet. Spray rack and baking sheet with non-stick cooking spray.

Rub brown sugar over both sides of bacon to coat. Place on wire rack and bake until bacon is nicely browned, about 25 minutes. Remove from heat and set aside until cool enough to handle. Coarsely chop.

Place eggs, half and half, sugar, vanilla and cinnamon in a medium bowl, whisking to combine.

Dip bread slices in egg mixture and transfer to a baking dish. Pour any excess egg mixture over the top.

Place 2 tablespoons butter in a large skillet over medium high heat. Add 4 slices of bread and cook until golden brown, about 3 minutes. Turn and cook the other side. Transfer to a plate and loosely cover to keep warm. Repeat with remaining butter and bread.

Drizzle French toast with maple syrup. Top with berries and candied bacon. Serve immediately.
