  • 3 STRIPS FARMER JOHN® THICK-CUT BACON, COOKED AND CHOPPED
  • 1 TABLESPOON OLIVE OIL
  • 1 POUND FRESH GREEN BEANS, TRIMMED AND CUT INTO 2-INCH PIECES
  • 3 CLOVES GARLIC, FINELY CHOPPED
  • 1-1/2 CUPS CHOPPED COOKED BEETS
  • ½ TEASPOON COURSE SEA SALT OR KOSHER SALT
  • 1/3 CUP CHOPPED PECANS
  • 1/3 CUP CRUMBLED GOAT OR FETA CHEESE
  1. HEAT OLIVE OIL OVER MEDIUM HEAT IN LARGE NON-STICK SKILLET AND COOK GREEN BEANS, STIRRING OCCASIONALLY, 5 TO 7 MINUTES OR UNTIL JUST CRISP-TENDER.
  2. ADD GARLIC, BEETS AND SALT. CONTINUE COOKING, STIRRING OCCASIONALY, 2 MINUTES OR UNTIL BEETS ARE HOT AND GARLIC IS FRAGRANT.
  3. TRANSFER TO LARGE SERVING PLATTER OR BOWL.
  4. SPRINKLE WITH CHOPPED BACON, PECANS AND CHEESE. SEASON, IF DESIRED, WITH FRESHLY GROUND BLACK PEPPER.
TWIST ON A CLASSIC: FOR AN EXTRA SWEET AND SPECIAL FLAVOR TWIST, SUBSTITUTE YELLOW COOKED BEETS FOR THE PURPLE BEETS, GLAZED CHOPPED PECANS FOR THE PLAIN PECANS AND BLUE CHEESE FOR THE GOAT CHEESE. RECIPE CAN EASILY BE DOUBLED FOR A LARGER CROWD!
