Green Beans with Bacon & Beets

  • 3 strips FARMER JOHN® THICK CUT BACON, cooked and chopped
  • 1 lb. freshgreen beans, trimmed and cut into 2-inch pieces
  • 3 cloves garlic, minced
  • 1 tsp. olive oil
  • 1 1/2 cups cooked beets, chopped
  • 1/2 tsp. kosher salt, or to taste
  • 1/3 cup chopped pecans
  • 1/3 cup (1.5 oz.) goat chèvre cheese
  1. Combine green beans, garlic and olive oil in large skillet. Sauté, stirring frequently until green beans have softened, but are still al dente.
  2. Add beets and salt; continue sautéing until beets are hot (about 2 minutes). Transfer to a large serving platter or serving bowl.
  3. Sprinkle chopped bacon on top of the green beans and beets. Add pecans and goat cheese.  Season with salt and pepper and enjoy!
