Toss shrimp with lime juice and season, if desired, with salt and pepper.
On a preheated grill or grill pan, grill shrimp, sausage and pineapple until shrimp turn pink, sausage is heated through and pineapple is grilled lightly.
Chop sausage, shrimp, and pineapple into bite-size pieces. Combine in large bowl.
Grill corn tortillas until lightly toasted and warmed.
To serve evenly divide sausage, shrimp, pineapple, jalapeño and tomatoes on tortillas. Garnish, if desired, with lime wedges.
