  • 1 Farmer John® California Natural® Pork Tenderloin
  • 1 lb. Yukon Gold or red potatoes, cut lengthwise into 3/4-inch thick slices 1 tablespoon canola oil
  • 1/2 cup (2 oz.) shredded reduced fat or regular sharp Cheddar cheese 1/4 cup light or regular sour cream
  • 2 tablespoons finely chopped green onions

Spice Rub:

  • 2 teaspoons salt
  • ½ teaspoon cracked black pepper
  • 1 teaspoon garlic powder

 

  1. Sprinkle pork with spice rub.
  2. Heat charcoal or gas grill to medium; spray grates with nonstick cooking spray. Grill tenderloin until internal temperature reaches 145ºF. to 160ºF., turning occasionally, about 20 minutes. Let stand 10 minutes before slicing.
  3. Meanwhile, brush both sides of potato slices with oil; grill 15 to 20 minutes until just tender, turning occasionally. Remove potatoes and pork from grill.
  4. Top potatoes with cheese, sour cream and onions. Serve with tenderloin cut into 1/4-inch thick slices.
