Versatile and flavorful, this recipe works great as a side dish or a bring-to-work lunch.
- 1 1/2 cups whole wheat or regular couscous
- 1 package FARMER JOHN® Classic Ham lunch meat, coarsely chopped
- 1 cup dried cranberries
- 1/4 cup chopped green onion
- Cook couscous according to package directions; cool slightly.
- Stir in ham, dried cranberries and green onion; mix well. Cover.
- Top with olive oil and lemon juice.
Swap out couscous with quinoa for even more protein.
