Ham Steak Carbonara
Cheese Mixture
Directions
Combine all cheese mixture ingredients in a bowl.
Whisk until fully mixed and looks like a creamy paste. Set aside.
Cook the pasta according to directions. Drain, reserving 1/4 cup of pasta water.
Heat up a large pan over medium heat. Drizzle with olive oil, and add diced ham to sauté until nice and crispy but not over cooked. Lower the heat for the ham.
Once the pasta is al dente, add it to the ham using slotted spoon.
Use your spatula and keep mixing, adding pasta water to form a creamy sauce.
Simmer for 2-5 minutes. Keep adding pasta water for consistency, you want a gravy consistency - not too thick.
Turn off heat. Wait for 1 minute. (Extra tip: you can’t add it too soon or else your egg mixture will turn to scrambled eggs!)
Then, add the cheese mixture, using the spatula to incorporate the pasta and sauce.
If it’s too dry, add more of the pasta water. Then, top with black pepper, a pinch of salt. (Extra tip: Add chili flakes for heat.)
