HAWAIIAN-STYLE BACON-WRAPPED PORK TENDERLOIN
Your friends will be salivating before you can even finish saying the name of this dish.
INGREDIENTS:
- 1 (1-POUND) PORK TENDERLOIN
- 1 TEASPOON KOSHER SALT
- ¼ TEASPOON FRESHLY GROUND PEPPER
- 6 FARMER JOHN® BACON SLICES
- 6 SLICES FRESH PINEAPPLE, ABOUT ¼-INCH THICK
DIRECTIONS:
- HEAT OVEN TO 425° F. COAT LARGE ROASTING PAN WITH COOKING SPRAY.
- SEASON PORK WITH SALT AND PEPPER.
- WRAP BACON AROUND PORK TENDERLOIN, SECURING WITH WOODEN PICKS IF NECESSARY. TRANSFER TO ROASTING PAN.
- ARRANGE PINEAPPLE SLICES AROUND PORK IN PAN.
- BAKE 25 MINUTES OR UNTIL MEAT THERMOMETER REACHES 145°F (PORK WILL BE SLIGHTLY PINK IN CENTER).
- PLACE UNDER BROILER, ABOUT 5 INCHES FROM HEAT SOURCE, 3 TO 5 MINUTES OR UNTIL BACON IS CRISP.
- LET STAND 5 MINUTES BEFORE SLICING CROSSWISE INTO 1/2-INCH-THICK SLICES.
