  • 14 oz FARMER JOHN ORIGINAL SMOKED SAUSAGE LINKS
  • 16 oz Baby Kale & Spinach mix
  • 10 oz Cherry tomatoes, halves
  • 1/4 cup Raisins
  • 1/4 cup Cotija cheese, plus more to sprinkle on top
  • 1/2 cup Chili Almonds (recipe below)
  • 1 cup Lemon Dijon Vinaigrette (recipe below)

Chili Almonds

  • 1 cup Almonds
  • 1 tsp Chili Powder
  • 1/2 Lemon squeezed

Lemon Dijon Vinaigrette

  • 1/4 cup Stone Ground Dijon
  • 1/2 cup Olive Oil
  • 1/2 Lemon squeezed
  • Dash of Chili Powder
  1. Follow Recipes below for Chili Almonds and Lemon Dijon Vinaigrette. Set aside.
  2. Place the kale/spinach mix in a large bowl. Add Chili Almonds, raisins, Cotija cheese & toss with the vinaigrette.
  3. On the grill, (or in a large cast iron pan,) brown the Smoked Sausage. Then, cut at an angle for even prettier presentation.
  4. Portion the salad on each plate, add the cut Smoked Sausage on top or on the side.

Chili Almonds

  1. Preheat oven to 425 degrees. Toss almonds with chili powder & lemon juice.
  2. Bake for 12 minutes until darker in color.
  3. Can be made the day before

Lemon Dijon Vinaigrette

  1. Use a stick blender to emulsify or a whisk to mix everything thoroughly.
  2. Can be made a day before
