  • 4 LARGE SWEET POTATOES, PEELED AND CUBED (ABOUT 8 CUPS)
  •  3 TABLESPOONS OLIVE OIL
  • 2 TEASPOONS GROUND CINNAMON
  • 1 TEASPOON GROUND GINGER (OPTIONAL)
  • 2 TABLESPOONS BUTTER
  • 1 CUP CHICKEN OR VEGETABLE BROTH, HEATED
  • 2 TABLESPOONS MAPLE SYRUP
  • ½ TEASPOON SALT
  • 1/8 TEASPOON GROUND BLACK PEPPER
  • 4 SLICES FARMER JOHN® CLASSIC BACON, CRISP-COOKED AND CRUMBLED
  • ¼ CUP CHOPPED GLAZED PECANS OR WALNUTS
  1. PREHEAT OVEN TO 425°F
  2. IN LARGE BOWL, TOSS POTATOES WITH OLIVE OIL, CINNAMON AND GROUND GINGER. PLACE ON A BAKING SHEET AND ROAST 35 TO 40 MINUTES OR UNTIL TENDER.
  3. IN LARGE MIXING BOWL, MASH ROASTED POTATOES WITH BUTTER. STIR IN BROTH, SYRUP, SALT AND PEPPER.
  4. TRANSFER TO SERVING BOWL AND TOP WITH BACON AND NUTS.
