Mexi Pinwheels with Bacon

  • ½ cup of cooked and chopped Farmer John® Thick Cut Bacon
  • 4 large spinach or flour tortillas
  • 8 oz. softened cream cheese
  • 1 cup shredded pepper jack cheese
  • 1 cup canned black beans drained and rinsed
  • 1 cup diced bell peppers
  • ¼ cup fresh cilantro to garnish
  1. Mix together cream cheese and shredded pepper jack
  2. Spread cheese mixture over each tortilla
  3. Sprinkle with bacon, bell peppers and black beans over each tortilla
  4. Roll tightly, hold in place with toothpicks if needed
  5. Slice tortillas into pinwheels
  6. Garnish with cilantro and serve
