Pineapple Polish Sausage Tacos

  • Farmer John® Polish Smoked Sausage Links
  • 1 fresh pineapple, peeled and cut into 1/2-inch thick slices
  • 10 Mission® Corn Tortillas
  • 1 red onion, diced
  • Fresh cilantro
  • Fresh lime wedges
  • TABASCO® Sauce
  1. Heat grill to medium, about 400ºF. Grill sausage for 13 to 15 minutes, turning frequently, until steaming hot.  Cut on bias into 1/4-inch thick slices.
  2. Grill pineapple slices until heated through and char marks appear, 1 to 2 minutes per side; chop.
  3. Heat tortillas on grill until toasted.
  4. Arrange sausage slices, chopped pineapple, onion and cilantro on warmed tortillas. Serve with wedge of lime and TABASCO Sauce.
