Heat grill to medium, about 400°F. Grill sausage for 13 to 15 minutes, turning frequently, until steaming hot. Cut on bias into 1/4-inch thick slices.
Grill pineapple slices until heated through and char marks appear, 1 to 2 minutes per side; chop.
Heat tortillas on grill until toasted.
Arrange sausage slices, chopped pineapple, onion, and cilantro on warmed tortillas. Serve with wedge of lime and Tabasco Sauce.
