Riced Cauliflower & Hot Sausage Burrito Bowl

  • 2 Farmer John® Hot Link Sausages, sliced
  • 1 tablespoon olive oil
  • 2 red, orange and/or yellow bell peppers, thinly sliced
  • ½ cup thinly sliced white or sweet onion
  • 1 package (10 oz.) frozen riced cauliflower, cooked according to package directions*
  • 1/2 cup salsa
  • 3 cups baby spinach or arugula
  • 1 can (10.5 oz.) black beans, rinsed and drained
  • 1 cup prepared guacamole
  • Tortilla chips (optional)
  1. In large nonstick skillet heat olive oil over medium-high heat and cook peppers and onion, stirring occasionally, 5 minutes or until softened. Add sausage and cook, 5 minutes, stirring and turning sausage until cooked through and browned.
  2. Combine hot cooked cauliflower and salsa in a medium bowl.
  3. For each grain bowl, evenly divide spinach, sausage, riced cauliflower mixture, beans, peppers, onions and guacamole.
  4. Serve, if desired with tortilla chips.
*Refrigerated riced cauliflower is available in most stores; steam before adding to salsa.
