Sausage and Lemony Couscous Salad

Tender slices of FARMER JOHN HOT LOUISIANA CHICKEN SAUSAGE® and a zesty lemon and agave dressing make a quick-cooking grain salad into a meal that’s perfect for lunch on the go or dinner on a warm summer night. You next potluck will welcome a delicious double batch.

Cook Time: 15 minutes

Servings: 4 servings


  • 1¾ cups water
  • 1 (8 oz.) box Israeli couscous
  • 2 tsp. plus 1/3 cup olive oil
  • 1 package FARMER JOHN® Hot Louisiana Chicken Sausage, sliced
  • Zest from 1 lemon
  • 2 tbs. lemon juice
  • ½ tsp. salt
  • ¼ tps. ground black pepper
  • 2 tsp. agave syrup
  • 1 cup shredded carrots
  • 6 green onions, sliced


Place water in a small saucepan and bring to a boil over high heat. Stir in couscous, reduce heat to low, cover and simmer until all liquid has been absorbed, about 14 minutes. Uncover and set aside.

Meanwhile, place 2 teaspoons. oil in a large skillet over medium high heat. Add sausage and cook for 3-4 minutes until lightly browned, stirring occasionally. Set aside.

Place olive oil, lemon zest, lemon juice, salt, pepper, and agave syrup in a large bowl and whisk until creamy. Add couscous, sausage, carrots and green onions, stirring to combine. Add more salt and pepper if desired.

Serve hot, warm or cold.
