Sausage & Grilled Fajitas
INGREDIENTS:
- 1 package Farmer John® Polska Kielbasa Loop Sausage
- 1 avocado, peeled and seeded
- ¼ cup sour cream or crema
- 1 tablespoon lime juice
- 1 clove garlic, finely chopped
- 3 red, yellow and/or orange bell peppers, cored and quartered
- 1 red onion, sliced into 1-inch thick rounds
- 6 fajita size flour tortillas (regular, spinach, tomato or whole grain)
DIRECTIONS:
- In medium bowl smash avocado with sour cream until creamy. Stir in lime juice and garlic. Season, if desired, with salt and black pepper; set aside.
- Preheat grill or grill pan and grill sausage, peppers and onion until sausage is cooked through and peppers and onion are tender and charred.
- Thinly slice sausage and peppers and rough chop onion.
- Warm tortillas on grill.
- To serve evenly divide sausage, peppers and onions between flour tortillas.
- Dollop with avocado cream and roll up.
