Smoked Sausage Elote Salad

  • 14 oz FARMER JOHN ORIGINAL SMOKED SAUSAGE LINKS
  • 2 bunches of Tuscan kale
  • 3 ears of Corn (either Grilled or Fresh) removed from the cob
  • 1 orange bell pepper diced small
  • 1 yellow bell pepper diced small
  • 10 oz Cotija cheese
  • 1/2 cup Mayonnaise
  • 1/4 cup Olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp ancho chili powder
  • 2 limes
  • Dash of Chili powder
  1. Rinse kale and pat dry. Remove stem and rough chop the leaves thinly, using your hands massage the kale for better texture. Set aside.
  2. Remove corn from the cob using a knife
  3. In a large bowl, add the chopped kale, corn, and diced bell peppers
  4. In a small bowl, whisk together the mayonnaise, oil, salt, black pepper, chili powder, juice from 1 lime and half of the cotija cheese.
  5. On the grill, (or in a large cast iron pan,) brown the Smoked Sausage. Then, cut at an angle for even prettier presentation.
  6. Top off the salad with Sausage, a dash of chili powder & lime wedge. Add more cotija cheese if desired.
