Whole Wheat Pasta with Sausage, Spinach & Tomatoes

Cook Time: 20 minutes

Servings: 4-6 Servings


  • 1 (1 lb.) box whole wheat pasta
  • 1 tbs. plus 2 teaspoons olive oil
  • 1 (12 oz.) package baby spinach
  • 4 medium tomatoes, chopped
  • Salt and ground black pepper, to taste
  • 1 medium yellow onion, chopped
  • 1 package FARMER JOHN® Hot Louisiana Chicken Sausage, sliced


Fill a large pot of water and bring to a boil over high heat. Add pasta and cook until just tender. Pour pasta into a colander to drain. Return to pot and stir in a tablespoon of olive oil. Stir in spinach and tomatoes. Season with salt and pepper, cover and set aside.

Meanwhile, place remaining oil in a large skillet over medium high heat. Add onions and cook, stirring occasionally, until golden. Add sausage and cook for 3-4 minutes, stirring often until heated through.

Add sausage mixture to pasta and toss to combine.

Serve hot.
